The mono and diglycerides of fatty acids (E471) are used as emulsifiers in bakery products allowing ingredients that would not normally mix, to stay in solution together. They have the function of stabilising and homogenising substances not mixed together in order to improve crumb softness or increase the volume of the loaf. In pastries and Danishes, these mono and diglycerides are used to get a flaky crust and when used in cakes can result in a more airy crumb.
