Read on to discover how to make these yummy cupcakes.
Ingredients (Serves 12)
For the cupcakes:
- 140g Wheat & gluten free flour
- 140g Caster sugar
- ½ tablespoon of baking powder
- 30g of cocoa powder
- 100g butter
- 120ml of milk
- 1 medium egg
- 1 teaspoon vanilla
- 2 oranges
- A handful of milk chocolate chips
For the icing:
- 300g icing sugar
- 40g butter
- 30g cocoa powder
- 10ml whole milk
- 30ml fresh orange juice
First off, make sure to get your butter out of the fridge so that it softens up nicely – about 30 mins before you start to bake! When you’re ready to start, combine all of your dry ingredients for the cupcakes into a bowl (the flour, sugar, baking powder) and also add in your softened butter. Mix it all together until you have a consistency that looks a bit like breadcrumbs.
Next whisk together your milk, vanilla and egg. Add this to the dry ingredients whilst mixing to make a smooth batter. Now you’ll need to zest both of your oranges and mix half of it into your batter. Keep the rest to the side for decoration. At the same time as you stir in your zest, add a handful of chocolate chips (we won’t tell if you add two!).
Spoon your mixture evenly into 12 cupcake cases and bake them for 20 minutes at 170 degrees. Once they’re bouncy to the touch, take them out of the oven and place them on a wire rack to cool.
Now it’s time to make the icing! Mix the icing sugar, butter, milk, butter and orange juice (squeezed from the oranges) together until it’s light and fluffy. Once your cupcakes are all cooled pipe the icing on top in whatever creative way you like! Use orange zest and whatever else you have handy to decorate.
Time to enjoy!
