Happy St Patricks Day for our Irish friends! A tradition since the 17th century, the day commemorates the death of St Patrick and the arrival of Christianity in Ireland. Also known as the Feast of Saint Patrick, what better way to celebrate than with a gluten-free AND dairy-free loaf of old-fashioned Irish soda bread?
- 280g of gluten-free flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon of xanthan gum
- 1/2 teaspoon of salt
- 35g of gluten-free oats
- 1 egg
- 1 cup of buttermilk or almond milk
Make sure to pre-heat your oven before you start to 375 degrees. Prepare a baking tray with some gluten free flour to line.
Mix together the dry ingredients i.e. your flour, baking soda, baking powder, xanthan gum, oats and sprinkle of salt into a big bowl. Then add your egg and milk and mix until you form a dough that is soft and sticky.
Once you’ve got the right consistency, place your dough on a counter that is lightly floured. Shape it into a flat round – no kneading required! Pop your soda dough onto the prepared baking tray and score a big X through the top. Bake until lightly golden-brown for about 30 minutes.
All that’s left to do is tuck in and enjoy!
